Turkey Chowder recipe

I pray you are all having a very blessed Thanksgiving today!

I made a new soup a few weeks ago that was really good– Turkey Chowder!  I had cooked up a turkey breast in the crock-pot a while back and froze the leftovers. So, this soup took only about 30 minutes to make.  And, of course, it will be perfect for your Thanksgiving turkey leftovers!

Turkey Chowder

1 cup finely chopped onion

1 cup finely chopped carrot

1 cup finely chopped celery

1 T. butter

1/2 cup flour

4 cups chicken broth

4 cups half-and-half

1/2 t. salt

1/4 t. white pepper

1/8 t. cayenne pepper

3 cups diced cooked turkey

Saute the onions, carrots, and celery in butter in a soup pot.  Blend in flour.  Stir in broth and half-and-half.  Stir constantly until mixture thickens.  Add in spices and turkey.  So easy!
