Lemon Loaf Cake (my grandmother’s recipe)
1 pkg yellow cake mix
1 pkg lemon jello mix (6 oz.)
1 c. water
2/3 c. vegetable oil
1/4 stick butter
For the glaze:
2 c. powdered sugar
Mix first five ingredients well. Melt the butter and pour into 9 x 13 pan. Pour cake batter on top. Bake 350 degrees for about 30 minutes.
As soon as cake is taken out of oven, glaze with the following:
2 cups powdered sugar and the grated rind and juice of 2 lemons, mixed well.
