My mother-in-law often has this soup ready for us when we arrive at their house in Wisconsin after a 6-hour drive.
Vegetable Beef Soup
2 big onions, diced
6 ribs celery
chuck roast, cut bite-sized, fat trimmed (but save the fat)
4 cloves garlic
Brown all of the above together.
12 carrots, peeled and cut
8-10 small red potatoes, unpeeled, cut into bite-sized pieces
Add those to the pot and remove the fat.
big can petite diced tomatoes
2 big cans of water
1 T. Better than Bouillon beef base
4 T. dried parsley
salt and pepper
Add all that to the rest of the ingredients.
Bring to a boil, then simmer (or cover and let it sit).
