Potato Croquettes
Potato Croquettes
6 small potatoes
3 T. grated ham
1 egg, beaten
1 t. chopped parsley
3 egg yolks
bread crumbs
cooking oil
salt and pepper to taste
Boil and mash potatoes. Add ham, salt, pepper, egg yolks, and parsley. Mix well and form into balls, dipped in beaten egg and rolled in bread crumbs. In a skillet, heat the oil and fry the balls until heated through.
