Black Bean Soup
5 carrots, sliced
5 ribs celery, sliced
2 onions, diced
2 T. olive oil
4 cans black beans, undrained
1 large can diced tomatoes, undrained
5 cups water
3 t. chicken bouillon
4 cloves garlic
1/4 t. ground red pepper
1 T. Cajun seasoning
2 t. cumin
In a large soup pot, saute the carrots, celery, and onion in oil. Add other ingredients and bring to a boil. Simmer 20 minutes. Blend and serve.
