Mumsy’s Christmas Morning Soufflé

Mumsy’s Christmas Morning Soufflé has been a tradition for every Christmas morning for as long as I can remember! Now, I’m making it at my house.

Ingredients for Mumsy’s Christmas Morning Soufflé:

2 loaves white sandwich bread

3 jars Kraft Old English cheese spread

2 sticks butter

8 eggs

4 cups milk

Directions for Mumsy’s Christmas Morning Soufflé:

  • Freeze the bread loaves for easier cutting and spreading.  
  • Grease a 9×13 or larger pan. Or, use 2 pans.
  • Mix the 2 sticks of softened butter (in microwave if necessary) with the cheese spread.
  • Pull out one bread loaf at a time. Take about 4 slices, stack them, and cut the crusts off. Spread the butter/cheese mixture on one side of each slice. Restack them and cut into 9 or 16 squares per slice. Place into pan.
  • Repeat until your pan(s) is full.
  • Beat the eggs and milk together. Pour over the bread in the pan. Put any extra butter/cheese mixture on top.
  • Choose one of the following: Cover and freeze for later. Cover and refrigerate for later. Or, bake uncovered for about 1 hour at 350 degrees. Then let it sit for 10-15 minutes before serving.

Low Carb Version of Mumsy’s Christmas Morning Soufflé

To create a healthier, low-carb, or keto version of Mumsy’s Christmas Morning Souffle, I’ll try adapting it with some of the following next time I make it.

Ingredients Adjustments:

  1. Bread Replacement:
    • Use keto-friendly bread made from almond or coconut flour, or purchase a low-carb bread option.
    • Alternatively, use a chaffle (cheese waffle) or bake a homemade keto bread.
  2. Cheese Spread:
    • Replace Kraft Old English cheese spread with a homemade cheese mixture using cream cheese and sharp cheddar for fewer additives and carbs.
  3. Eggs and Milk:
    • Keep the eggs as is (they are keto-friendly).
    • Replace regular milk with unsweetened almond milk, heavy cream, or a mixture of both to reduce carbs.

Directions Adjustments:

  • Baking: Bake as directed. Keto bread or alternatives may absorb the liquid differently, so you might need to check for doneness a bit earlier.
